Back in 2011, I was walking through the streets of Hong Kong when I came across something that quickly became a favourite—sizzling beef pepper rice.

I still remember the first bite. It had that mix of sweet and savoury that just worked, and after that, I kept going back for it. It was one of those meals I knew I’d want to recreate at home. The good part is, it’s actually pretty simple to put together. You start with sautéed onions and beef, then add rice, corn, green onions, a simple sauce, and a bit of butter to bring it all together.

The Rise and Spread of Beef Pepper Rice

Beef pepper rice actually comes from Japan, and it’s closely tied to the Pepper Lunch restaurant chain. It started in the early 1990s with chef Kunio Ichinose, and the first restaurant opened in Tokyo in 1994.

Part of what made it so popular is how it’s served. The ingredients come out on a hot plate, and you finish cooking everything right at the table. It’s simple, but it makes the whole meal feel a bit more interactive. Over time, it spread across Asia and beyond, and it’s easy to see why. The combination of thinly sliced beef, rice, sauce, and that hot, sizzling plate just works.

A Quick, Easy, and Delicious Go-To Meal

This has been one of my go-to meals for years, especially on those days when everything feels a bit rushed. It comes together quickly—sauté the onions, cook the beef around the edges, then add the rice, corn, scallions, sauce, and a bit of butter. Within a few minutes, everything starts to come together and you’ve got a full meal on the table.

It’s also one of those meals the kids never say no to. It’s become a favourite in our house, and it’s usually gone pretty quickly. Even their friend somehow knows when it’s on the menu.

I like making it in a cast iron pan because it gives the rice a bit of crisp on the bottom, which just adds another layer to it. And on busy days, having something like this to fall back on makes a big difference.

What You’ll Need

  1. Beef slices:
    • The star of the dish! Choose thinly sliced beef for quick cooking and tenderness. My go-to choice is typically beef brisket used for hotpot. It can be found in many Asian supermarkets. It has a thin and tender cut making it quick to cook and easy to bite into. Also, the marbling in brisket adds flavour and juiciness to the dish.
  2. Onions:
    • Sautéed onions add a sweet and savoury flavor to the dish, complementing the beef and enhancing the overall taste.
  3. Cooked Rice:
    • I prefer using freshly cooked rice. The rice soaks up the flavours and adds a satisfying, hearty element.
  4. Bell Peppers:
    • Adds vibrant colours, a sweet crunch, and a hint of freshness to the dish. You can use a mix of colours for visual appeal.
  5. Corn:
    • Sweet corn kernels contribute a burst of sweetness and texture, balancing the savoury flavours of the beef.
  6. Scallions:

  7. Soy Sauce:

  10. Mirin & Maple Syrup:
    • Mirin is a sweet rice wine that adds a subtle sweetness to the sauce. This sweetness can counteract the saltiness of the soy sauce, creating a more well-rounded and harmonious taste.
    • Maple syrup offers a distinct sweetness with a hint of caramel undertones. This can add a rich and nuanced sweetness to the sauce and can contribute to the thickness and stickiness of the sauce, helping it coat the ingredients more effectively.
  11. Furikake:
    • Sprinkling Furikake over the finished dish introduces a savoury and umami-packed punch, complementing the beef and adding an extra layer of flavour.
  12. Fried Egg:
    • Adding a sunny-side-up fried egg on top enhances the dish with a delightful and delicious touch.

Ingredients

  • 3 cups cooked rice
  • 1/2 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 lbs sliced beef (I like using beef briskets used for hot pot)
  • 1 pack enoki mushrooms (optional)
  • 1 cup bell peppers (optional)
  • 2 cups corn niblets (canned or frozen)
  • 1/2 cup scallions
  • 1/4 cup Furikake (optional)
  • 1 fried egg (optional)
  • 2 tbsp butter

Sauce

  • 1 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp brown braising sauce
  • 2 tbsp mirin
  • 1 tbsp maple syrup
  • 1 tsp sesame oil
  • 2 tbsp water
  • 1 tsp gochujang sauce (if you want a bit of a kick and something different)

Instructions

  • Heat a pan or wok over medium-high heat.
  • Sauté the sliced onions and minced garlic until they become translucent and slightly caramelized.
  • Add rice on top and in the middle of the pan.
  • Pour a small amount of oil into the pan, ensuring it coats the surface around the rice. Place the sliced beef into the pan, allowing it to sauté while you gradually incorporate the remaining ingredients.
  • Toss in the sliced bell peppers, corn kernels, and chopped scallions.
  • Add the butter on top.
  • Pour in the sauce and stir until all the ingredients are thoroughly cooked and evenly combined. If you think there's too much sauce, feel free to use only the desired amount.
  • For an extra burst of flavour, sprinkle Furikake over the dish. This step is optional but adds a savoury touch.
  • For an additional indulgence, fry an egg and place it on top of the Beef Pepper Rice.
  • Once everything is well-mixed and heated through, your Beef Pepper Rice is ready to be served hot!
