Introducing a Showstopper: Carrot and Tomato Spread

Carrot and tomato spread might not sound particularly exciting at first, but this dip is an absolute crowd-pleaser. Made with fresh, crunchy carrots, it’s exactly what you need to add some serious flavour to your snack game. Whether you’re looking for a healthy appetizer that will win everyone over or just a tasty sidekick for your everyday meals, this dip has you covered. It’s my ultimate go-to for last-minute get-togethers because it’s quick, simple, and always hits the spot.

This recipe is from Cookidoo (Thermomix), and it’s one of our all-time favourites. It’s a regular in our kitchen and something we whip up quite often. Since I make it in the Thermomix, it only takes about 15 minutes, making it incredibly easy to keep things healthy and delicious. My boys and their friends LOVE IT, and it’s become a massive hit with our friends and family too. We’ve served it at so many gatherings, and it always gets rave reviews.

The spread is mainly carrots with a bit of tomato paste for depth. It’s the perfect companion for tortilla or fattoush chips, crackers, or even just a slice of crusty sourdough bread. It’s also a great way to elevate a simple plate of crudités. Sometimes I’ll use multicoloured carrots instead of just orange ones—the taste difference is very subtle, but the colour is beautiful. If I’m making this for a BBQ, I like to add a pinch of smoked paprika for a rich, smoky layer of flavour.

Whether you’re having a chill night with the family or hosting a bigger get-together with friends, this carrot and tomato spread is the perfect thing to have on standby. It’s quick, nourishing, and a total hit.

Ingredients:

– 1 shallot
– 90g butter 
– 250g carrots
– 120g tomato paste
– 1 tbsp each of oregano, thyme, basil (more or less depending what you like) – sometimes if I don’t have certain herbs I use other ones like Italian seasoning
– 1 tsp salt
– 1 tsp sugar

Thermomix Instructions:

  1. Put the shallot in the mixing bowl, chop 3 seconds/speed 5 and push down with the spatula.
  2. Add 20 g butter and sauté for 1 min. 30 sec./120°C/speed 1 .
  3. Add the carrots, chop for 5 seconds/speed 5 and push down with the spatula.
  4. Add 25 g butter, tomato paste, thyme, oregano, salt and sugar and steam for 6 minutes/90°C/speed 2 , then puree 10 seconds/speed 10 and serve warm or cold as a spread or as a dip.

Stovetop Instructions:

  1. Heat a medium-sized saucepan over medium heat. Add 2 tablespoons of butter and allow it to melt.
  2. Add the finely chopped shallot to the melted butter. Sauté the shallot for about 2 minutes or until it becomes translucent, stirring occasionally.
  3. Add the chopped carrots to the saucepan. Stir well to combine with the sautéed shallot and butter.
  4. Add the tomato paste, dried thyme, dried oregano, salt, and sugar to the carrots. Stir to evenly distribute the seasonings.
  5. Reduce the heat to low, cover the saucepan with a lid, and let the mixture simmer for about 15-20 minutes or until the carrots become tender. Stir occasionally to prevent sticking.
  6. Once the carrots are soft, remove the saucepan from heat and allow it to cool slightly.
  7. Transfer the carrot mixture to a blender or food processor. Blend until you achieve a smooth and creamy consistency.
  8. Serve the carrot and tomato dip spread warm or chilled. It can be used as a delicious spread for bread, crackers, or as a dip for fresh vegetables.
